After setting sail from Playa Flamingo with fishermen who have worked the waters of Guanacaste for generations, you’ll learn about sustainable fishing and traditional hand-line methods. These time-honored techniques allow fishermen, suppliers, conservationists, and consumers to work together to catch and cook fish from ocean to table—ensuring a sustainable origin, supporting local coastal communities, and guaranteeing maximum freshness.
You’ll bring your catch to the beachfront restaurant Estero Azul, where, alongside a chef-anthropologist, you’ll prepare a meal inspired by pre-Hispanic culinary styles.
